Wat tan Hor and Mi Goreng Mamak for lunch on March 3, 2011 - Cantonese Style Fried Noodles/Wat tan hor recipe

Had Wat tan Hor and Mi Goreng Mamak at YAMISU TEA HOUSE (真功夫) located at 101 again this afternoon. We tried to find the the newly opened Yamisu Tea House which I read somewhere that is situated at food court on Level 1, Green Heights Mall which is nearer to our house but we could not find the place so we went to Premier 101 again. Fortunately it was not packed with cars on the road. It was still early so the traffic was not so jam but when we were returning home the traffic was quite heavy.

Cantonese Style Fried Noodles recipe

o 300g flat rice noodles, cut into 1.5cm thick strips
o 70g meat (pork or chicken), sliced
o 3 medium prawns, shelled
o 1 tbsp oil
o A few drops of sesame oil
o 1 tsp chopped garlic
o 1 egg
o 3 stalks mustard greens, cut into 5cm lengths

Marinade (A)

o A pinch of salt
o 1/2 tsp tapioca or corn flour
o Dash of pepper
o 1 tsp egg white
o 1 tsp oil

Seasoning (B)

o 1 tbsp oyster sauce
o 1 tbsp light soya sauce
o 2 cups fresh chicken stock
o 1/2 tsp chicken stock granules
o 1 tsp sugar
o 1/4 tsp salt or to taste
o 1 tsp Shao Hsing Hua Tiau wine


o 1 tbsp corn flour
o 2 tbsp water


Put the flat rice noodles in a wok and add a little oil. Fry briskly over high heat until heated through. Dish out and leave aside.

Lightly season meat (pork or chicken) with marinade (A). Heat oil and sesame oil in a wok and sauté garlic until lightly golden.

Add in marinated meat and prawns. Fry well, then add in seasoning (B) and bring to a boil. Put in mustard greens and add thickening. Turn off the heat and break in the egg.

Give it a quick stir, then pour the gravy over the noodles. Serve immediately.
