Sweet and Sour Fish Fillets recipe & Seafood Fried Rice recipe

Had lunch at one of the newly opened shop in BDC. Forgot what's the shop name already as we were rushing for time. We ordered Sambal Seafood Fried Rice and Sweet and Sour Fish Fillet and pineapple rice. The bill was RM13.60.

Sambal seafood fried rice


2 tbsp. cooking oil
1 1/2 c. onion, sliced 1" long
4 ribs celery, sliced diagonally
1 tbsp. ginger root, chopped
2 cloves garlic, chopped
1 red pepper, diced
4 c. rice, cooked
1/2 c. beef broth
1/2 lb. shrimp, cooked and cut in half
1 c. crab meat, flaked
1/2 pkg. snow peas, cut in strips
2 eggs
2 tbsp. soy sauce
Green onions and tops, thinly sliced

Heat oil in large skillet over low heat. Add onions, celery, garlic and ginger. Stir and cook 5 to 8 minutes. Add red peppers and cook for 3 minutes. Add rice and broth. Cook for 2 minutes. Add shrimp, crab and snow peas and cook for 2 minutes. Remove from heat. Beat eggs and soy sauce together. Push the rice to one side of the skillet. Return to low heat and add eggs and stir until eggs are set, fold gently into rice. Heat and remove to warm bowl. Sprinkle with green onion tops.

Sweet and Sour Fish Fillet and pineapple rice


1 lb. fish
1/2 c. flour
1 egg
1/2 c. water
Oil for deep frying
1/3 c. brown sugar
1/3 c. vinegar
1/2 c. pineapple chunks
1/2 carrot (shredded)
2/3 c. sweet pickles
1 tomato, cut in wedges
1 1/2 tbsp. cornstarch dissolved in 1/2 c. water

Cut fish into pieces 2 x 1. Dredge in cornstarch and allow to dry slightly on waxed paper. Make batter of 1/2 cup flour, 1 egg, 1/2 cup water, and salt.

In separate small pot dissolve brown sugar and vinegar over medium heat. Stir up cornstarch in 1/2 cup water; add to pot and stir thoroughly. Add remaining ingredients. Cook 3-5 minute until sauce is clear, not cloudy. Reserve.

Fill iron skillet or wok half full with oil. (I use less.) Turn heat very high. The oil must be very hot. Place 8-10 pieces of fish in batter. Use fork and place fish in hot oil. Cook 2 minutes each side.

Remove to towel and cook more. Repeat until all the fish is cooked. Serve over brown rice, then sauce on top with soy sauce. This is very good!
